Smoked Salmon

Smoked long and slow over oak. Delicious! Will feed 8-10 people.

A whole side of salmon ready to be sliced. Perfect size for parties. For even slices in helps to use a scalloped edged knife. Start 1/3 of the way along the fish from the tail and slice evenly towards the tail moving along approximately 2cms towards the head with each slice.

Marinaded in soya, vinegar, sherry, garlic and ginger then roasted in the hot smoker to give a rich succulent flavour. Very popular in our restaurant where the steaks are slightly warmed to make the juices run.
